Hello beautiful people of the internet,
Today I had a craving. If you’re a student you know that while you’re revising for exams, you tend to crave pretty much anything and everything to keep you going. Baking is also a great way to procrastinate..maybe a little too good.
I was craving chocolate chip cookies but wanted something a little healthier. So after consulting the all knowing Google, and adding my own twist into it, I came up with these beauties!
You can definitely switch to brown sugar or leave out the chocolate chips and stick with cacao nibs, but I have a sweet tooth!
Recipe:
- 57g butter
- 100g sugar
- 1 egg
- 1/2 tsp vanilla extract
- 70g plain flour
- 70g oats
- 1/2 tsp baking powder
- 60g cacao nibs
- A handful of chocolate chips
Method:
So the proper way to do it is to cream the butter and sugar together first. Then add the flour, egg and rest of the ingredients. But me being me I just threw it all into a bowl together and they came out pretty good! Bake them at 190 for 10-15 minutes. Keep an eye on them until they are slightly brown around the edges. Then remove and allow them to cool on a wire rack.
